So tart I needed to add powdered sugar, but hey, I can’t control nature….wish I would have had ice cream!

Raspberry Fruit Squares

A fresh berry treat that has the lovely tartness you'd come to expect from a raspberry. Sandwiched nicely between a sweet crumb crust and streusel style topping.

Equipment

  • 9×9 inch Baking Dish
  • Mixing Bowl
  • Wooden Spoon
  • Parchment Paper
  • Pastry Cutter or Fork
  • Measuring Cup
  • Measuring Spoon

Ingredients

  • ½ cup Sugar
  • ½ tsp Baking Powder
  • cups Flour
  • ¼ tsp Salt
  • ½ cup Butter very cold, sliced
  • 1 ea. Egg beaten
  • 1 tsp Vanilla Extract
  • 16 oz. Raspberries
  • cup Sugar
  • 2 tsp Corn Starch

Instructions

  • Pre heat oven to 375°f/190°c. Place the parchment paper in the baking dish ensuring it hangs over the sides. This will help in removing the Squares
  • In a bowl combine Sugar, Baking Powder, Flour and Salt, mix thoroughly
  • Using a pastry cutter or forks cut the Butter into the Flour mixture. Add the Butter one piece at a time mixing as you go. It should look like wet sand. It can be done in a food processor. just don't mix to the point the Butter begins to melt from the heat
  • In another bowl combine Egg and Vanilla. Add this to the Flour mixture and combine until it becomes crumbly
  • Take half of the Dough and press into the bottom of the baking dish. Make sure you cover the entire bottom of the dish
  • In a separate bowl add Raspberries, Sugar and Cornstarch. Mix until the Raspberries are completely coated. Place Raspberry mixture on top of the crust in the dish
  • Sprinkle remaining dough over the Raspberries. The Berries won't be completely covered and that's alright
  • Bake in the oven for approximately 45 minutes until the top is golden brown and the Raspberries are bubbling up the sides
  • Cool completely, cut and serve

Notes

Additional Twist: The Raspberries can be substituted with any other berry. The dish can be gluten free. Just sub out the Flour with a Gluten Free Flour. Add a splash of Blood Orange to the mix to throw it over the top. If Kumquats are in season add some quartered Kumquats to the Berry mix
